ABSTRACT

The objective of this paper is to compare the quality of butters sold in the sector of the Maracaibo municipality in relation to the COVENIN 120:1994 standard. The study was descriptive, with documentary, field design. The technique of direct, indirect and documentary observation was used. The data record tables were used as instrument. In describing the values recommended by the COVENIN 120: 1994 standard for the physicochemical analysis, it was concluded that the parameters of proteins and pH that were not established in the standard for physicochemical aspects could be evaluated. Also in determining the microbiological parameters, some values that do not meet the quality required for this food product were appreciated in the selected samples. By contrasting the results of the physicochemical and microbiological analyzes carried out on butters with respect to the COVENIN 120: 1994 standard, values were obtained that do not comply with the norm, referring to excess moisture, fat deficit, presence of microorganisms Aerobic mesophiles, amount of total and fecal coliforms, molds and yeasts. While they comply with the norm established for the parameters of percentage of chlorides, degree of acidity, ash content and absence of bacteria staphylococcus aureus, escheriachiacolis and salmonella sp.
