On my off days from work, me and my wife often still do what I do at work which is cook. Today my wife cooked some really delicious baked eats. It was salmon with asparagus and some simple roasted potatoes.
The potatoes are roasted for 20-30 minutes in the oven at 200 degrees celcius with salt and black pepper and what made it super delicious was the duck fat that we used to roast the potatoes with. I cooked duck confit a couple of weeks back and I stored the leftover oil used for that dish into mini containers to use on the go. Makes everything that much more delicious.
The salmon is seasoned with salt and black pepper as well with some minced garlic, doesn't have to be pretty in your chopping of it. This will really give it a great aroma and flavor to the dish. The asparagus is thrown in with the salmon into the same roasting pan and then a half a block of butter goes in. You could use lesser buttter but we really wanted the whole dish to scream "BUTTER BAKED SALMON". You really can't miss it that way.
The salmon is then baked in a 200 degree oven for about 7-8 minutes. You'll get a super moist and perfectly cooked salmon that's still slightly pink in the center. Juicy and absolutely delicious!
It was super flavorful and really one of the best dishes my wife has ever cooked. Really loved it and everything complimented one another perfectly. My favorite thing of all on this plate were the potatoes. Man that duck fat scented potatoes that are soft in the center like mash potatoes. Cubes of fluffy golden deliciousness!
Tonight I'll be cooking some black pepper lamb stew to serve with some leftover potatoes from lunch. Gonna be yum yum!
