Earlier this week me and the family went to my dad's place to have lunch and have the kids and cousins hangout and have some playtime together. one of the dishes we had for the day was 'Rendang Curry Chicken'.
Rendang is a thick curry that has loads of local ingredients and chilli that makes this a local favorite. It is unique to Malaysia and you've probably heard it being a dish that has won some Masterchef finale dishes.
This dish is like the equivalent of a stew and thus it varies slightly from place to place. Every Malaysian household would have their own recipe to this and you would never get tired of rendang as it always seem to be a little different from household to household. Whatever it is, it is definitely, I dare say, EVERYONE in Malaysia loves!
To make the sauce you've gotta blend up shallots, loads of them, garlic, ginger, galangal, candlenut, chilies. Fry them in oil until the oil seperates from the paste and then add in your chicken. Preferably use chicken thighs for this as you want this to cook for about an hour or so till fall off the bone. Chicken breast will dry out too fast for this dish so thighs would be the most suitable option.
Throw in some pandan leaves and coconut milk and simmer for an hour or until fork tender.
Serve this with some plain steamed white rice and you've got yourself a sumptuous meal to dig into.
If you're ever in Malaysia, this has got to be the dish to try. There is another variation to this dish which is beef rendang. A must try as well.
