Every good chili starts with a good mince. Here I use the flat top on my food truck to get maximum sear as well as being able to cook large portions without boiling the meat. You get lotsa heat distributed evenly through flat surface of the griddle; making it an ideal tool to cook the perfect mince.
My mince is 80/20 ratio of beef to beef fat. I season it with salt and pepper and cook it it's own fat without any oil. This makes it the ultimate beefy base for your beef chili.
You could also use this mixture for a bolognese sauce or any other meat sauces. I like to make stews and meat gravy, and the reason why I like cooking stews and such is because you can cook it in a large batch and separate it into smaller portions to freeze. This makes for easy heat up dinners that you can have quickly. It makes for good meals at the snap of your fingers.
Some other mince I like to do whenever I have access to my griddle are mince chicken. Add oil or butter and let them fry and you'll get "fried chicken" flavored mince meat. With just some salt and pepper, you get really really good flavorful chicken mince.
Use this in any sauce and you're good to go. Chicken mince can also be used in white sauces and not just tomato base sauces, making it a very versatile meat to use.
