Hey hey hey. How are my favorite friends in the virtual world doing? So, who's hungry? You? Perfecto! Today we'll make roasted chicken breasts with lemon. Mmm, just saying that makes my mouth water.
Below are the ingredients:
. 60 ml olive oil
. Nine garlic cloves, peeled and minced
. 80 ml white wine/ white grape juice
. One tbsp grated lemon zest
. Two tbsps freshly squeezed lemon juice
. One and a half tsp of dried oregano
. One tsp minced thyme leaves
. Kosher salt and black pepper
. 4-5 boneless chicken breasts
. One lemon, sliced or wedged
. Preheat your oven to 200º C
. Warm the olive oil in a pan over medium heat. Add the garlic and cook for a minute but don't allow it to brown.
. Turn off the heat then add the grape juice, lemon juice, lemon zest, oregano, thyme, and one tsp of salt. Pour the contents in a 22-by-33-centimeter baking dish.
. Pat the chicken breasts dry and place them skin side up on the sauce. Brush them with some olive oil and season with salt and black pepper generously. Set the lemon slices/wedges close to the chicken pieces.
. Bake for 30-40 minutes or until the chicken is done and browned.
. Cover the baking dish with aluminum foil and let it cool for 10 minutes. Afterward, season with salt and serve hot!
