Homemade turnip puree with baked garlic

The secret ingredient in this dish is ghee, which gives the vegetables a delicate flavor and subtle nutty flavor.

  • Garlic 1 head
  • Olive oil 1 tsp
  • Salt taste
  • Ground black pepper taste
  • Turnip 1300 g
  • Butter 50 g

  1. Preheat oven to 200 ° C. Cut off the top of the garlic, drizzle with olive oil, sprinkle with salt and pepper, and wrap in foil.

2 ․ Bake the garlic in a preheated oven until soft for 40 minutes, then cool and peel.

3 ․ Peel the turnips, cut into large cubes and boil in boiling salted water until soft for 35–40 minutes.

four. Melt the butter over low heat and heat for 8-10 minutes until brown. Stir the oil periodically and remove any hard lumps from it.

five. Throw the finished turnip in a colander, transfer back to the pan, add garlic, thyme, ghee, salt and pepper to taste and mash everything into a homogeneous puree.
