I think of many favorite breakfasts, these oatmeal hot cakes are spongy and delicious. I wanted a healthier recipe to prepare on Sundays or weekends, which is when we usually eat them at home.
For this recipe oats are used instead of wheat flour and we use plantain to use less sugar and thus sweeten naturally. There are not very sweet to sweeten the taste of each person with maple syrup, bee or jam, but if you like sweets the hot cakes then add more sweetener to taste. 2 cups oat flakes
1 ¼ cup coconut milk, almond or your favorite milk
1 medium banana
2 teaspoons baking powder
1 envelope of stevia or mashed sugar to taste
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
Oil spray to grease, to taste
Blend the oat flakes until they have the consistency of flour.
Add the other ingredients (coconut milk or almond, banana, cinnamon, vanilla, stevia or sugar, baking powder, egg) and blend until there are no lumps.
Grease a grill, grill, or pan with oil and empty ¼ cup of the mixture for each hot cake or pancake.
Cook 2 to 3 minutes per side over medium heat. Turn over when you see bubbles on the surface and look cooked and more opaque the edge of the hot cake.
Serve with maple syrup, bee, jam or your favorite topping.
DULZOR : There are not very sweet to sweeten the taste of each person with maple syrup, bee or jam, but if you like sweets the hot cakes then add more sweetener to taste.
WAFFLES : You can prepare it in the waffle maker , check the cooking time since it depends on each waffle maker.
BAKING POWDER : IF that amount is CORRECT, it is not not much, it is the one that needs the recipe so that they sponge. If you want to try with less then you can do it but it may not fit well. The recipe is proven as written.
