Classic Apple pie


This recipe was a very successful buttery flavored apple pie. I borrowed it from Cafe Boheme's chef who told me that customers really enjoyed it..


The ingredients were enough to make two small trays (or one big one!). I offered the one to my dear friends.


Ingredients for the dough: 500 gr of all purpose flour, 250 gr of butter in room temperature, 2 eggs, 2 tsp of baking powder, 1 tsp of salt, 130 gr of caster sugar. For the filling: 1300gr of mixed apples (2/3 in rough pieces, 1/3 shredded), 350 gr of sugar, 350 gr of water, 1 tsp of cinnamon powder, 1 tbsp of all purpose flour in 100ml of water


This filling needs some preparation. You peel and cut the apples as you normally do. Then, put your apples in a pan, along with the sugar and the 350gr of water. Let them simmer for 20’. Towards the end, mix 1 tbsp of flour in 100ml of water, put in the pan and mix altogether. Take the pan off the fire.


Mix the butter and the eggs with a hand mixer. Add the sugar, the salt and gradually the flour in which you have already mixed the baking powder. Divide the dough in two (or four, depending on how many apple pie trays you are making), spread the one piece of dough on a 35 cm oiled tray. Spread the apple filling. With the remaining dough, create stripes or whatever kind of dough motives you like and cover the apple filling. Bake for 30-40’ in 160C.
