I really wanted to use some kelp noodles as they are sooo good for us so i made this quick dish.
I made a cashew sauce with coriander, garlic and soaked cashews ( I only have a food processor right now so cant make it as creamy as it should be). I then poured this sauce over my noodles.
For the mushrooms i marinated them in oil and liquid aminos for 30 minutes then dehydrated them with some courgettes ( ideally both mine needed way longer but i was really hungry and didn't want to wait!, but ideally wait till your courgettes are crispy).
I then threw on some herbs, chopped chilli and ginger
