Dasar pemanfaatan lokasi kecil di belakang rumah untuk memelihara beberapa ekor ayam kampung, kini banyak hasil yang sudah membantu
kebutuhan konsumsi keluarga. Dalam bulan puasa ini saja kami menangkap dua ekor ayam jantan sedang ukuran belah dua belas, lalu kami bawa ke pasar tempat pemotongan ayam untuk di sebelih dan dikuliti serta di potong - potong
untuk disajikan dalam makanan untuk berbuka puasa.

Memang agak bingung untuk memilih menu masakan yang rendah
lemak jenuh dan sudah pasti yang nikmat dan lezat. Kalau di olah pakai santan kelapa sudah pasti banyak menu olahan untuk daging ayam. Maka teringat resep Rica- Rica Ayam
Pedas yang tidak menggunakan santan kelapa, disamping semua bahan mudah tersedia di rumah dan cara memasaknya tergolong cukup mudah. Di bawah ini akan disajikan tip memasak resep daging Ayam kampung yang memang sudah ada dirumah dengan menu Rica-Rica Ayam Pedas, sebagai berikut :

Bahan - bahan :

  • 2 ekor ayam kampung sedang
  • 6 siung bawang putih
  • 10 siung bawang merah
  • 15 buah cabe rawit merah
  • 3 buah biji kemiri
  • 1 ruas jari kunyit, di bakar dulu.
  • 1 ruas jari jahe
  • 1 ruas jari Lengkuas
  • 1 batang serai
  • 3 lembar daun salam
  • 100 gr gula merah
  • 1 sendok teh merica bubuk
  • garam secukupnya
  • Kaldu bubuk penyedap, secukupnya
  • 1 sendok makan gula putih
  • Kecap manis secukupnya
  • Kecap asin secukupnya
  • 2 sendok makan minyak goreng
    untuk menumis, saya gunakan
    minyak Zaitun.
  • Air secukupnya.

Langkah :

  • Cuci bersih ayam yang sudah di
    potong - potong beberapa bagian.

  • Rebus ayam sampai empuk, kira -
    kira 60 menit, lalu tiriskan. Dan
    sisihkan air bekas rebusan ayam
    dan kaldunya untuk nantinya di
    gunakan kembali.

  • Haluskan bahan bumbu halus yang
    terdiri dari Bawang Putih, bawang
    merah, cabe rawit, kemiri, kunyit,
    Jahe, Merica dan Serai di geprek
    saja.

  • Tumis bumbu halus, lalu
    tambahkan serai, daun salam,
    lengkuas dan gula merah sampai
    wangi.

  • Masukkan air bekas rebusan ayam
    kedalam tumisan bumbu halus
    tersebut, lalu tutup dan tunggu
    hingga mendidih.

  • Masukkan ayam, garam, penyedap
    rasa, lalu aduk hingga kuahnya agak
    menyusut, supaya semua bumbu
    meresap kedalam ayam.

  • Tambahkan kecap lalu aduk lagi.
    Dan cicipi rasa, seandainya masih
    ada yang kurang tambahkan apa
    yang di butuhkan.

  • Tunggu sampai kuah menyusut, lalu
    angkat dan Rica-Rica Ayam Pedas
    Lezat dan Nikmat siap untuk di
    hidangkan dan dinikmati bersama
    dengan nasi putih hangat.
