Maple syrup time

One of the first things in the year that we do on our farm is collect sap from our sugar maple bush to boil down into syrup. We make a couple of gallons for our own use and to gift out. It takes between 40 and 50 gallons of sap to make one gallon of Maple syrup. We collect that every couple of days when the sap is flowing good off of 20 taps. We tap our trees around the end of February till about the first of March depending on weather. The best temperature for sap flow is 7c during the day and -7c at night. We collect our sap from sugar maples but you can make syrup from most maples, they just have less sugar in the sap and even some birches can be used.
