After treating ourselves to a late and heavy breakfast we were still feeling kind of full by dinner time but my son wanted to snack on something so I decided to prepare some homemade hummus and vegetable platter!
Hummus is easy to make, and this tahini less version almost guarantees you have everything you need to make this healthy dip in your pantry.
15 Oz can garbanzos (drained and rinsed)
3 Tbsp extra virgin olive oil
Juice of 1 lemon
1 Garlic clove, peeled
1/4 Cup roasted red peppers in water or oil (drained)
1/2 Tsp ground cumin
1/2 Tsp salt
3 Tbsp water
- Place all ingredients in blender. Since I was making a small batch I used my Nutribullet.
- Purée to your desired consistency, I like mine a tad drier but if you prefer a smoother hummus slowly add the water until you get the consistency you enjoy.
- Chop up your red peppers and stir into your hummus.
- Serve alongside your favorite veggies and pita! I prefer pita crisps over soft pita.
