Nothing keeps the autumn chills at bay better then a plate of hot baked ziti being served straight from the oven! The best part is it is so easy to make and I've yet to meet anyone who does not love it!
The combination of the cheeses used create a creamy, delicious dish! This is a very rich dish so if you're counting calories I suggest you look away!
Easy Peasy Cheesy Ziti
Preheated oven at 375 degrees
16 oz De Cecco ziti
2 Tbsp unsalted butter
5 Cups homemade marinara sauce or "Prego" sauce
1/2 Cup marscapone
1.5 Cups mozzarella + 1 Cup
1 Cup ricotta
1 Cup Parmigiano grated
Salt & Pepper
Cook ziti according to package directions. Make sure not to overcook as you want it "al dente" since it will cook a little bit more in the oven.
Drain ziti, place in an oven safe dish. Toss in butter and salt/pepper to taste. Do not over salt as your grated parmigiano can be salty.
In a bowl combine you're 1.5 cups mozzarella, parmigiano and ricotta. Put 3/4 cups of this cheese mixture aside.
Simmer your sauce and to this add your marscapone cheese stirring constantly until the marscapone melts into the sauce. You might still have a little bit of lumps and that is ok.
Into your pasta, mix in your cheese mixture and as much, or little sauce, as you like. I don't like to go too crazy with the sauce but I do know some people prefer a "wetter" ziti. You can freeze the remaining sauce for 3 months.
Top with the remaining cheese mixture and then the 1/2 cup of mozzarella.
Cover your dish and bake for 30 minutes. At 30 minutes uncover and let cook 15 minutes longer so the cheese browns a tad on top.
Carefully remove from the oven and enjoy!
