If you’re a prepper like me, or are getting into it due to the pandemic we are unfortunately going through, I know you have some kind of beans stored in tour pantry! Yesterday I rotated my stock and I noticed I had a couple of bean products I needed to use up so I decided we’d be having my Three Bean Salad for lunch!
This salad is super easy to make and keeps well for a couple of days in the fridge. Actually it tastes better the next day.
1 Can each:
1/2 Small onion diced
1 Persian cucumber diced
1/4 Cup chopped cilantro
1 Lemon juiced
Salt & Pepper
1 Large clove garlic
2/3 Cups vinaigrette of your choice
1 Tbsp Red pepper flakes
Crumbled feta cheese (optional)
- Mince or press your garlic clove into your bean mix.
- Add all the remaining ingredients including salt and pepper to taste.
- I sometimes substitute balsamic vinegar and extra virgin olive oil but using an Italian vinaigrette works great and gives it added flavor!
- Mix everything well and refrigerate for a minimum one hour.
- Serve and enjoy!
I sometimes like to add feta when I serve it but plain is also perfect! Let me know if you make it and what you think!
