【好好吃饭系列】水煮蘸饺

饺子原名“娇耳”,距今已有一千多年的历史,尽管经过岁月的洗礼,饺子的名字、形状、馅料都有所变化,但它始终是我国各地最欢迎的美食之一。

饺子是很神奇的存在,它既可以作为小吃,也可以作为一道菜,也可以作为正餐;既可以蒸着吃,也可以煮着吃,煎饺又是另一番风味。

作为饺子的忠实爱好者,我们家属于那种一时兴起就会什么菜也不做,就马上自己和面、炒馅,以饺子为正餐。通常,我们更喜欢吃蘸料。


Step 1
准备好比例适中的面粉和水,尽可能多揉面,这样才能使面质更劲道。

Step 2
将揉好的面切成图中接近乒乓球大小的面团,然后用擀面杖擀成饺子皮,薄厚程度适中就好,个人比较喜欢略厚一点。

Step 3
开始炒馅儿。我们采用的土豆猪肉馅儿,可能有些朋友没有尝试过这种馅。先将猪肉切碎,大火翻炒,同时将土豆丁用开水适度地煮一煮(为了使土豆不那么硬),然后再将土豆与猪肉一起炒,可以稍加适量孜然提味。

Step 4
包饺子,饺子一定要包紧实,因为马上煮的话很容易煮散。

Step 5
在四川,蘸水十分重要,如果蘸水不好吃,饺子再好吃都算浪费。我们喜欢的蘸水必备:辣椒油、蒜泥、藤椒油和醋。

自己做饺子的好处就是面皮薄厚可自选,馅料实在,想吃多少吃多少,朋友们不妨可以试试,简单又美味。
