The meat on the satay is chicken meat. What distinguishes from the chicken satay Madura is a seasoning made of finely chopped tempeh cooked with coconut sugar into a little thick sauce. The taste of the tempeh itself is gone, the sublime becomes rasagurih-sweet favors, though there is no visible presence of soy sauce here. Satenya seasoning is sweet enough. It feels like kendendo (coconut milk thickened in the process of making coconut oil).
